Ingredients

Plain flour - 0.55lbs (250 g)

Warm water - 2/3 cup (150 ml)

Olive oil – 1 tbsp (15 ml)

Instant dry yeast – 1 tsp (3 g)

Fine salt – 1 tsp
Flatbread Dough
Directions
Prepare the dough
In a bowl, combine flour, yeast, and salt.
Add warm water and olive oil, mixing until a soft dough forms.
Knead briefly (3–4 minutes) until smooth and elastic.
Rest
Cover and rest the dough for 30–45 minutes, until relaxed and slightly puffy.
Preheat the stone
Heat the pizza oven until the stone surface reaches approximately 752° F (400 °C), checking with a temperature gun or via the KILN P display.
Prepare dough
Divide the dough into 2 equal portions.
Stretch each into an oval or round approximately 7–8 in (18–20 cm) wide.
Using a fork, poke holes through the dough on both sides.
This prevents excessive bubbling and keeps the flatbread even.
Bake – first side
Place the flatbread directly onto the hot stone.
Immediately turn the burner down to low.
Cook until the underside is golden with light charring and the top has set, about 1½–2 minutes.
Flip and finish
Remove the flatbread, flip it over, and return it to the stone.
Cook the second side until lightly browned and charred, about 1–2 minutes.
Remove and serve
Remove from the oven once both sides are evenly cooked and lightly charred.
Serving suggestion
Serve warm with your choice of spreads or toppings.
