Ingredients

Halloumi Slab – 6.5 oz (180 g), cut into 6 even cubes

Zucchini – 6 thick slices (rounds)

Red capsicum – 6 thick pieces

Red onion – 6 chunky pieces

Olive oil – 1½ tbsp

Lemon juice – 1 tbsp

Dried oregano – 1 tsp

Smoked paprika – ½ tsp

Cracked black pepper – ½ tsp

Fresh parsley or oregano, finely chopped – 1 tbsp

Extra olive oil – light drizzle

Directions
Preheat the cast iron pan
Place the cast iron pan or griddle directly into the pizza oven and heat it as the oven preheats.
Using a temperature gun, monitor the surface temperature of the cast iron.
The target temperature is approximately 536 °F (280 °C) on the pan surface.
Note: This temperature refers to the cast iron itself, not the oven or stone temperature shown on the display.
Prepare the skewers
Cut the halloumi into 6 even cubes.
Slice the zucchini, capsicum, and red onion into 6 similar-sized pieces.
Thread one piece of halloumi, one zucchini, one capsicum, and one onion onto each skewer.
Each skewer should be full and evenly balanced.
Note: If using wooden skewers they will need to be soaked overnight to avoid burning.Season
In a bowl, gently toss the assembled skewers with olive oil, lemon juice, oregano, smoked paprika, and black pepper until lightly coated.
Cook
Once the cast iron has reached approx 536 °F (280 °C), carefully remove it from the oven.
Lay the skewers into the hot pan and insert cast iron pan / griddle back into the KILN P. Cook for 2 minutes, remove then flip and cook for a further 2 minutes.
For the final 15 seconds, turn the burner to full power to blister and caramelize the halloumi and vegetables.
The halloumi should be golden on the outside, soft within, and the vegetables lightly charred.
Plate and finish
Transfer the skewers to a serving plate.
