Ingredients

Salmon fillets, skin removed - 2 whole fillets 9.5 oz (approx. 270 g total)

Olive oil - 1½ tbsp

Lemon zest - from 1 lemon

Lemon juice - 1 tbsp

Garlic, finely grated - 1 clove

Sea salt - ½ tsp

Cracked black pepper - ½ tsp

Lemon - thinly sliced into rounds

Fresh dill, finely chopped - 2 tbsp

Extra olive oil - light drizzle

Directions
Preheat the cast iron pan
Place the cast iron pan or griddle directly into the pizza oven and heat it as the oven preheats.
Using a temperature gun, monitor the surface temperature of the cast iron.
The target temperature is approximately 482 °F (250 °C) on the pan surface.
Note: This temperature refers to the cast iron itself, not the oven or stone temperature shown on the display.Prepare the salmon
Keep the salmon fillets whole.
In a bowl, gently coat the fillets with olive oil, lemon zest, lemon juice, garlic, salt, and pepper until evenly covered.Skewer
Thread each whole fillet lengthways onto metal skewers to support the fish and make turning easy during cooking.
Optional to use wooden skewers, these will need to be soaked overnight to avoid burning.Cook
Once the cast iron has reached approximately 482 °F (250 °C), carefully remove it from the oven.
Lay the skewered salmon into the hot pan. Place pan into the KILN and cook for 2 minutes. Turn the burner to low.
After 2 minutes, carefully remove pan from the KILN , flip the salmon. Return the pan to the KILN and cook for a further 2 minutes.
For the final 20 seconds, turn the burner to full power to lightly caramelize the surface.
The salmon should be just opaque, moist, and flake easily.Plate and finish
Arrange the lemon slices in a single layer on a serving plate.
Remove the salmon skewers from the pan and lay them directly over the lemon rounds.
Finish with a sprinkle of fresh dill and a light drizzle of olive oil.
Serve immediately while hot.
