Whipped Goats’ Cheese, Fetta, Caramelized Onion, Sage & Walnut Pizza

Makes 1 Pizza

Ingredients

  • 1 dough ball
  • pizza flour or coarse semolina flour
  • 75g (2.65 oz) whipped goat’s cheese
  • 50g (1.76 oz) crumbled sharp fetta
  • ½ tsp smoked sweet paprika
  • ¼ cup caramelised onions (shop bought or onions cooked in butter until golden brown)
  • 1/4 cup fresh sage leaves
  • 50g (1.76 oz) torn mozzarella
  • 1 tbsp honey
  • 2 tbsp fresh chopped walnuts

Step 1. Preheat the KILN on high, ensure the stone rotation is activated (if using the KILN R Series) during the preheat process.

Step 2. Press, pull and stretch out the dough ball until it’s the size you require. Sprinkle a little coarse semolina flour onto the peel and place the dough onto it.

Step 3. Spoon and spread the goat’s cheese onto the dough. Top with the fetta, paprika, onions, half the sage leaves, mozzarella, and honey.

Step 4. Place into the preheated KILN and cook until the bottom is crispy, and the top becomes golden. If using the KILN R Series ensure rotation is not activated when launching the pizza into the KILN.

Step 5. Finish with a scattering of walnut pieces and the remaining sage leaves.
